Oyster-Less Stew

Ingredients
1 small eggplant, peeled and cubed, 1.5 cups3 cups Kroger Skim Milk1 stick kroger unsalted butter (not margarine)1 tsp onion powder2 tsp salt sense 1 tsp black pepper
Directions
Peel and chop eggplant into small cubes.
Place in pot and just cover with water. You can add spices at this time if you like. Cook until falling apart, about 10 minutes covered. Add butter until melted, then add milk. Bring to boil and then reduce heat to simmer. Let cook another 10-15 minutes. Turn off heat and let sit until ready to eat.
