Cheesy Cauliflower Mock Mashed Potatoes

Ingredients
1 large head of cauliflower (or 1 bag of cauliflower)3 tbsp of butter2 tbsp of cream cheese2 cups of 2% shredded 4-cheese Mexican blend cheese1/4 cup of vegetable protein (optional) 3-4 cloves of garlic
Directions
Steam cauliflower (or boil for 6 minutes and drain). While steaming, reconstitute your vegetable protein if you are adding (optional). Add steamed cauliflower, garlic, cream cheese, and reconstituted vegetable protein to a blender or food processor and blend until almost puree (if you puree too thin, they will be runny). After you get the cauliflower to the consistency you desire, remove and add to a bowl. Add in the butter and cheese and let stand for 1-2 minutes to thicken. These will get cool quickly so you will want to serve right away.
