1 unbaked 9" pie crust1 10 oz package spinach1 tbsp olive oil2 tsp minced garlic1/4 cup fat free sour cream1/4 cup light soy milk (or fat free)1 cup egg beaters (or equiv of 4 eggs)1/2 cup feta cheese4 ounces tiny shrimp
Preheat oven to 375 degrees. Prebake pie crust for approx 5 minutes to thaw. Saute spinach and garlic in olive oil until wilted. Whisk together sour cream, egg beaters, and milk in bowl. Add spinach/garlic mixture, feta, and shrimp to egg mix, and stir together. Pour into crust. Bake 20 - 25 minutes. Yum!
