Chicken Cucumber Salad

Diced cooked chicken breast about 1 cup or 8 oz. 1 medium or large cucumber diced1/4 Cup Onion1/2 Cup Bell Peppers (I like Red and Yellow)1 large Celery stalk2 Tbsp Yellow Mustard3 Tbsp Mayonnaise (or dressing of your choice Just don't forget to add to the nutrition tracker!)Salt and Pepper to taste
Cook chicken breast using what ever low fat method you like. I use just enough water to cover bottom of fry pan and sprinkle chicken w/ garlic and onion powder. Cooking time will vary on how you cook your chicken. While chicken is cooking dice up cucumber, onion, bell peppers and celery. After chicken is cooked and cool, dice and add to veggies. Add mustard and mayonnaise. If you want it creamier just add what you want, You can use any salad dressing instead just don't forget to add any extra's to your nutrition tracker!
