Ingredients
- 1 cup dried Quinoa.- 1/2 red onion, chopped.- 1 small red bell pepper, chopped.- 1 finely diced Lebanese cucumber.- 1/2 cup cherry tomatoes, halved.- 1/2 tsp. dried parsley- 1/4 cup mint leaves, chopped.- 1/4 teaspoon ground cumin.- 1/4 cup freshly squeezed lemon juice.- 2 tablespoons extra virgin olive oil. - salt and pepper, to taste.
Directions
- Cook quinoa according to package instructions.

- Combine all ingredients into a bowl, and enjoy!
