Curry Chickpeas & Chicken

Ingredients
2 tsp. olive oil, divided1 boneless skinless chicken breast, chopped1 whole onion, chopped1 green bell pepper, chopped2 medium red-skinned potatoes, diced2 cups diced eggplant1 can diced tomatoes, with juice1 cup tomato sauce1 can garbanzo beans1 clove garlic, minced2 tbsp. curry powderdash of salt
Directions
Heat olive oil in pot.
Saute chicken breast until cooked through, set aside.
Add onions & bell peppers to pot, cook until soft.
Add potatoes, eggplant, tomatoes, tomato sauce, garbanzo beans and garlic.
Cook until potatoes are soft.
Add reserved chicken & seasonings to taste.
