Vegetable Frittata

Ingredients
Broccoli, fresh, 1.5 cup, chopped or dicedTomato, grape (3oz = appro 12 tomatoes), 3 ozOnions, raw, 1 cup, choppedcarrot shreds, 1 servingEgg, fresh, whole, raw, 11 largeSilk Almond Milk Original Light, 1 cupMozzarella Cheese, part skim milk, 5 oz1 TBSP Olive OilSalt & Pepper to taste
Directions
Saute all vegetable in 1 TBSP olive oil
Whip eggs and milk (almond milk) together with salt and pepper to taste
Place in 375 degree oven for approximately 20 min
sprinkle cheese on top - cover to let cheese melt.
Serve warm
May be reheated for breakfast (or lunch!)
