Zucchini Breakfast Quiche Cups

Ingredients
1/2 lb cooked and crumbled bacon, sausage, ham or meat of choice1 cup finely grated zucchini1/2 cup finely chopped onion1 cup grated Parmesan Cheese2 large eggs, slightly beaten1 cup egg substitute1/2 cup soy flour3 Tbsp olive oil1 Tbsp dried basil ( 1/4 fresh chopped)1/2 tsp pepper
Directions
preheat oven to 375. Place 18 paper cups in muffin pan. Place all ingredients except the cheddar cheese in a bowl and mix until well combined. Fill muffin cups 2/3 full (be sure to stir mixture in bowl as you go because zucchini and meat tends to sink to bottom). Sprinkle tops with shredded cheddar cheese. Bake until edges are golden brown and centers are cooked through, about 25-30 minutes. Cool 5 minutes before eating or remove to a wire rack and cool completely before freezing. Reheat frozen cup in microwave 30-45 seconds or until thoroughly heated.
