Chicken and Rice Puerto Rico

1/2 can Sofrito tomato sauce1/2 can tomato paste5 Red potatoes, peeled and chopped1/2 jar Goya Alcaparrado (olives, capers, etc)2lbs boneless, skinless chicken breast, cubed/sliced2 links pre-cooked Chorizo Sausage, sliced2 cups white Rice, cookedenough water to cover chicken1/2 med yellow onion, chopped2 tbls EVOO2 cloves garlic, minced
I like to cut all my ingredients first, so slice/cube chicken into bite-sized pcs, peel and cut potatoes, slice sausages, dice onion and mince garlic.
Add olive oil to pan and heat on med, sautee the onions and garlic. Add chicken and sear outside. Add water to cover chicken entirely. Add the tomato paste, sofrito and potatoes and increase to med high heat. When potatoes are about half way cooked add the sausage and the alcaparrado. Continue to cook until potatoes are tender, Serve over cooked rice.
