Judy's Scalloped Corn

Ingredients
2 cans (16oz each) canned cream corn1 cup reduced fat sour cream2 egg whites (or egg substitute)1 box Jiffy Corn Bread Mix, unprepared.5 cup water 1 cup reduced-fat cheddar or colby cheese
Directions
Mix ingredients in a baking dish. Bake uncovered at 375 for 15 minutes. Then reduce heat to 350 and bake for an additional 45 minutes or until golden brown. Makes 8 servings.

    I made this recipe for Easter and EVERYONE loved it, including my son-in-law, who's usually a little leery of new things. He even took the smidge that was left over home with him and THAT is unheard of. Kudos to Judy!! I'm going to have to try more of Judy's recipes, if they're all as good as this! - 4/14/09
