Cheesy Green Chili Rice

1 large onion, chopped2 tbsp butter or margarine4 cups hot cooked long-grain rice (I used brown)2 cups sour cream1 cup small curd cottage cheese1/2 tsp salt1/8 tsp pepper2 (4oz) cans, chopped green chilies, drained2 cups shredded, cheddar cheese
In a large skillet, cook onion in butter, until tender. Remove from heat. Stir in rice, sour cream, cottage cheese, salt and pepper. Spoon half of the mixture into a greased 11"x7"x2" baking dish. Top with half of the chilies and cheese. Repeat layers. Bake, uncovered, at 375 F for 20-25 minutes or until heated through and bubbly.
