Gluten Free Rice Noodles w/ Chicken, Leeks, Red Pepper

1 8 oz. pkg. Annie Chun's Maifun Brown Rice Noodles, dry2 qts. hot/boiling water1 1/3 cup sweet red pepper, chopped1 leek, sliced diagonally1 chicken breast, approx. 8 oz.2 cups fresh mushrooms, chopped2 T. minced garlic (Spice World)1/4 t. sea salt (optional)1/4 t. black pepper 2 T. Soy Sauce2 T. cooking oil (I used grapeseed. Can also use peanut oil, canola, etc.)
Add boiling water to maifun noodles and set aside for 6-8 minutes (no cooking required). Add peppers, mushrooms, leek, and mushrooms to oiled pan. Add garlic and salt and pepper. Saute for a few minutes. When noodles are done, drain and add to vegetables. Add soy sauce. Cook an additional 1-2 minutes.
