General Tso's Chicken

6 T white vinegar6 T Swerve6 T gluten-free soy sauce or tamari sauce6 T pineapple juice3 cloves garlic, crushed1 1/2 tsp. fresh ginger, minced1/2 tsp. cayenne pepper1 T tapioca starch1 1/2 lb. boneless, skinless chicken breast, cut into 1-inch pieces12 to 15 green onions, sliced12 oz. mushrooms, sliced1 1/2 cups sugar snap peas or broccoli
In a medium saucepan, combine vinegar, Swerve, soy sauce, pineapple juice, garlic, ginger, cayenne, and tapioca starch. Cook and stir over medium heat until thickened. Set aside.
In a wok or skillet, stir-fry check in wok oil over medium high heat. Remove chicken and set aside, keeping warm. Saute vegetables, adding more wok oil, if needed. Return chicken to the wok. Cover with the sauce. Cover over medium low heat until thoroughly heated. Serve immediately.
Serving Size: Makes 6 dinner-sized portions
