Baked Fish Sticks

Ingredients
2 mahi mahi fillets5 Tbs. flour1tsp. baking powder1 egg2 Tbs. lowfat buttermilk2 Tbs. water (if needed)
Directions
Beat the egg and add buttermilk. Add water if the mixture is too thick. Mix flour and baking powder. Add egg mixture. Cut fish filets into pieces, then dip in batter. Spray a cookie sheet with cooking spray and place fish on it. Bake at 425F for 20 minutes, turning halfway through.
