Easy Organic Carrot Bread

1 cup organic coconut flour1/2 cup organic whole wheat spelt flour2 cups shredded organic carrots1/4 cup raisins1/4 cup craisins1/4 cup walnuts, chopped1/2 teaspoon organic stevia extract2 tsp cinnamon1/2 tsp nutmeg1 1/2 tsp baking soda1/4 tsp sea salt1 whole organic egg1 organic egg white2 tbsp organic coconut oil1 cup filtered water
Combine the dry ingredients in a large bowl, and mix well. Form a well in the center and add the wet ingredients. Stir well, until the texture is that of bread dough. Knead lightly to mix thoroughly. Place the dough into a pre-buttered loaf pan (can use coconut oil, if preferred).
Bake at 350 degrees for 45 to 50 minutes (when the toothpick comes out clean). When cool, slice into 8 slices.
