Garden Chicken Salad Rollups

Ingredients
2 Chicken Breasts (pre-packaged breasts)2 green onions, green and white chopped1 medium carrot, quartered and diced1 celery stalk, halved lengthwise and chopped4 Tbsp Mayonnaise4 Tbsp Plain Yogurt2 tsp lemon juicesalt and pepper to taste10 or so medium sized Swiss Chard leaves or large romaine leaves
Directions
Chop chicken into eights (chunks). Boil for about 10 minutes (or until the foam on top starts to liquefy). Let cool until you can handle it. Put all chicken in a bag and pound with a meat mallet for a quick shred. You may want to cool the chicken in the refrigerator for about 15 more minutes.

Blend all ingredients together. Refrigerate if the chicken is still warm.

Serve in the chard/lettuce leaves like roll ups.
