2 tbs olive or canola oil1 garlic clove minced1 large onion, diced1 large green bell pepper, diced2 cans Rotel's Diced Tomatoes & Green Chiles (Mild or regular, depending on taste)2 cans creamed corn1 can whole kernel corn2 cups low sodium, low fat chicken broth1 cup milk (nonfat or 2%)2 cups diced chicken breast
Saute garlic, onion, and bell pepper until onion is translucent. Add all other ingredients and simmer over low heat 30 minutes.
Serve with grated cheese and tortilla chips (not included in nutrition total).
