quinoa enchilada's

Ingredients
Chicken Breast (cooked), no skin, roasted, 10 ounces (remove)Ancent Harvest's Quinoa, Traditional, Organic (1/4 cup dry / 46 grams), 1 cup (remove)Black Beans - canned - Kroger, 2 cup (remove)Yellow Sweet Corn, Frozen, 2 cup kernels (remove)*Average Roma Tomato, 2 serving (remove)La Victoria Enchilada Sauce, 1.25 cup (remove)*Colby and Monterey Jack Cheese shredded, 1.5 cup (remove)Chili powder, 2 tsp (remove)*Cumin seed, 1 tsp (remove)salt pepper to taste, i also added cilantro
Directions
cook quinoa,saute onion and green pepper in olive oil (i use garlic olive oil, or add garlic) till tender, add chicken and cook if using raw.
add all the ingredients together bake 375 for 20 min
