Slow Cooker Chicken & Mushrooms

Ingredients
1 1/2 cups brown rice1 medium onion, chopped1 tsp. salt1 tsp. black pepper1 can (10.5 oz.) cream of chicken soup (can also use cream of mushroom)2 cans (4 oz.) mushroom slices or pieces & stems, with liquid5 bone-in chicken thighs, skin removed1/2 cup water
Directions
Spray stoneware insert of slow cooker with cooking spray. Add rice, onion, salt & pepper to stoneware. Toss to combine.
In mixing bowl, stir together soup, mushrooms & mushroom liquid. Pour 1/2 of mixture over rice & onions.
Place chicken thighs over soup mixture. Cover with remaining soup mixture.
Add 1/2 cup water. Cook on low 8 hours.

Serving Size: 1 chicken thigh with 1/5 rice & mushroom mixture
