SCONES:1 Egg White1/4 cup Sugar (white, granulated)1 tbsp Margarine (melted)1/4 cup Milk (nonfat)1 tsp Vanilla Extract3/4 cup All-Purpose Flour1/2 cup Quick Oats3/4 cup Wheat Bran1 1/2 tsp Baking Powder1/4 tsp Baking Soda1/4 tsp SaltHONEY GLAZE (optional):1 cup Confectioners (Powdered) Sugar1 tbsp Honey1 tbsp Milk (nonfat), plus 1-2 tsp more as needed

PREP: Preheat oven to 350 degrees; Line cookie sheet with parchment paper
SCONES:
1. Whisk egg white with sugar in large mixing bowl
2. Whisk-in melted margarine, followed by milk, then vanilla
3. In a separate mixing bowl, combine flour, oats, wheat bran, baking powder, baking soda, and salt
4. Stir the dry ingredients into the wet ingredients until just combined
5.Turn-out dough onto a lightly floured surface and knead a couple times; if necessary, add more flour to prevent sticking
6. Shape dough into a disk shape, 1/2 inch thick
7. Transfer to lined cookie sheet and cut (or score) dough into 8 pie-shaped pieces
8. Bake for 10-15 minutes, until firm and lightly browned
9. Remove from oven and let cool slightly while preparing the glaze (optional)
HONEY GLAZE (optional):
1. In a small mixing bowl, mix confectioners sugar, honey, and milk until well blended
2. Add more milk to the mixture 1 tsp at a time (if needed) to achieve a thick, syrup-like constancy
3. Drizzle and lightly spread the glaze over the scones; enough to cover the top and slightly drip down the sides
