Light Carrot ginger dressing

1 carrot, medium, rough cut2 tbs fresh ginger chopped1 tsp brown sugar packed2 tbs rice vinegar ( unseasoned)1 tsp fresh lemon juice2 tsp low sodium soy sauce2 tsp sesame oil1 cup water
1. Cooks rough cut carrot and 1 cup of water until tender....about 15 minutes.
2. Meanwhile, put all other ingredients in blender.
3. Remove cooked carrot and half cup of water in which it was cooked. Process ingredients in blender until smooth.
Add pinch of salt and store in refrigerator.
Serving Size: Make 8 servings...2 tbs per serving
