Garden Egg Skillet

Ingredients
1 large carton egg substitute or egg whites1/2 TB olive oil1 medium zucchini, sliced1/2 green bell pepper, chopped1/2 red bell pepper, chopped1/2 red onion, chopped1 medium sweet potato1 medium red potato1 TB chopped garlic1 can black beans1 c shredded 2% milk cheddar cheesepaprika, salt and pepper to taste
Directions
Saute vegetables, potatoes and garlic in olive oil, until onions are clear. Transfer to a 9x 13 pan. Add egg substitute, beans, paprika and salt and pepper, mixing well. Sprinkle with shredded cheese. Bake in 375 degree oven for 30 minutes.
