Shrimp Jambalaya

Ingredients
1 1/2 Tbsp Olive Oil1 cup onion, chopped1/2 cup bell pepper, chopped1 garlic glove, minced1/2 tsp black pepper1/4 tsp cayenne pepper1/2 tsp salt1 cup white, long grain rice4 ounce tomato sauce, low sodium1 cup chicken broth, reduced sodium8 ounces raw shrimp, peeled 2 green onions, green tops sliced 2 Tbsp parsley, chopped
Directions
Saute onion and bell pepper in oil until translucent.
Add garlic, saute briefly.
Add tomato sauce, chicken broth, salt and peppers. Add rice.
Bring to simmer. Cover tightly and simmer for 20-25 minutes until rice is fluffy.
Stir in shrimp, parsley, and green onion tops. Re-cover. Simmer for 10 minutes.

Makes six one cup servings.

    This was a great recipe I actually modified mine just a bit by using 1 can Rotel and 1 can tomatoe paste I added sausage and used homemade chicken stock it was a huge hit will not have leftovers

    I loved this recipe. I used diced tomatoes because I had them in my pantry and also used cajun seasoning instead of cayenne pepper. I need to buy cayenne pepper to avoid the salt added to the food but I didnt use salt in the recipe to negate the salt in the cajun seasoning. - 3/7/11

    I added some polish sausage. This was DEEEElicious!!!! My rice took a bit longer to cook and I had to add a bit more liquid, but I will make this for the rest of my life!! Mmmmm mmmmm mmmmm! - 4/6/09

    Ok, I used pre-cooked brown basmati rice which was delish, but instead of adding chicken broth to the jambalaya, since the rice was cooked in it, we added about 1/2 cup of water instead. This recipe was YUMMY! - 1/20/09
