16 oz. Boneless, Skinless Chicken Breast1 Tbsp. Butter1 Tbsp. Olive Oil1 jar Good quality marinara sauce4 oz. Mozzarella Cheese8 oz. Whole Wheat Pasta (measured dry)1 c. Onion, chopped1 tsp. Minced garlic1 15oz. Can Petite Diced Tomatoes1 15oz. Can Tomato Sauce2 tsp. Dried Basil2 tsp. Sugar1 Tsp. Dried Oregano1/4 tsp. Crushed Red Pepper Flakes
Cut the chicken breasts into 4 oz. pieces. Start the pasta water.
Heat skillet to medium high, add olive oil and butter. Brown chicken breasts on both sides and remove to plate. In the pan, add the onion and sauté until tender (2-3 minutes), add the garlic, and sauté another minute. Pour in the diced tomatoes and tomato sauce. Add the sugar, oregano, basil and crushed red pepper. Bring to a boil, add chicken breasts back to the pan, cover and reduce to a simmer for 10 minutes.
When water is boiling, add pasta and cook according to package instructions.
Top each chicken piece with 1 oz. mozzarella cheese, cover and simmer another 5 minutes, or until cheese is melted.
Serving Size: Makes 4 servings
