Ingredients:*Brown Rice, long grain, 2.5 cup (remove)Beans, black, 1.25 cup (remove)Yellow Sweet Corn, Frozen, 1.0 cup kernels (remove)*Rotel Original Diced Tomatoes & Green Chiles, 1.2 cup (remove)Salsa, 1 cup (remove)Sour Cream, reduced fat, 1 cup (remove)*Cheese Mexican Lucerne 2% Milk Reduced Fat 4 cheese blend shredded, 2.0 cup (remove)Onions, raw, 0.5 cup, chopped (remove)Black Olives - Sliced (2 Tbsp.), 2 serving (remove)
Preheat oven to 350
In a large bowl combine beans, corn tomatoes, salsa, sour cream,1 cup cheese and rice.
Place in a greased 2 qt baking dish and top with onions and olives
Bake uncovered 30 minutes. Sprinkle with remaining cheese and bake 5-10 minutes until cheese is melted.
