Almonds, 1.5 cup, whole (oven roasted)Nutiva Organic Extra-Virgin Coconut Oil, 6 tbspZucchini, 2 medium (Shredded)Palm Sugar .25 cup Cinnamon, ground, 2 tbspNutmeg, ground, 1 tspCornstarch, 1 tbspWater, 2 tbsp
Process almonds in food processer, melt the coconut oil, once nuts processed mixed in oil and press in bottom of pan
Shred the Zucchini
In saucepan a little butter in pan cook up the zucchini, when tender add the remaining ingredients except corn starch.
When tender mix cornstarch in 2 tbs of water and pour into mix. Let get thick by stirring on low heat.
Pour over the almond crust and place in fridge to cool.
Serving Size: Use square cake pan, makes 8 servings
