Broccolli Cheddar Soup

Ingredients
Half gallon fat free half and halfhalf gallon chicken broth2-3 medium carrots diced finely1 medium onion diced 1 lb broccoli cut into small pieces (no stems)1 cup shredded sharp cheddar cheese (use 2% if you like)2 tbsp butter1/4 cup flour1 tsp salt1/2 tsp black pepper1/4 tsp nutmeg
Directions
Finely dice carrots, cut up broccolli in small chunks (leave out stems). Dice 1 medium onion, saute and set aside. Put 2 tbls butter in bottom of pan and slowly add 1/4 cup flour and whisk until well blended. Slowly pour in 1/2 and 1/2, then add chicken broth. Stir constantly for about 20 minutes on simmer. Add all veggies and let simmer for at least 20 minutes until thickened. Slowly add cheese until melted. Spinkle nutmeg on top and stir in. This recipe freezes well. I freeze in two portion containers for future use.
