Crockpot Egg Bake

Ingredients
32 oz bag Ore-Ida O'brien potatoes12 oz diced ham3 cups liquid egg substitute3 large eggs2 cups shredded 2% colby/mont jack cheese
Directions
Put all frozen potatoes into a small crock pot and layer ham on top. Whisk all eggs together with seasonings of your choice (I usually add some garlic and salt), and pour over ham and potatoes. Cook on low for 8 hours. Top with cheese and let melt for 20 minutes before serving.

    I used the hashbrown potatoes by mistake, added onions. I used american cheese and feta instead of the colby jack cheese. Next time I would boost it up with green peppers and mushrooms. - 8/31/09
