2 tsp Butter, whipped 3 tbsp Egg Beaters3 Tbsp Ricotta cheese, Low Fat2 tsp Mini Chocolate Chips 1 serving Thomas' Light Multi-Grain English Muffin
Combine ricotta, chocolate chips, 1/2 tsp vanilla, and sweetener in a small bowl, mix well
Open bun lengthwise without separating the halves. Spread ricotta mixture onto the bun, fold top half over mixture, making sure mixture stays inside; cut into four pieces.
Combine egg substitute, cinnamon, and remaining 1/2 tsp of vanilla in another bowl; set aside
Spray small amount of non-stick spray on bottom of medium skillet, turn heat to medium, and add butter
Coat each quarter with egg substitute mixture on all four sides, then place quarters in heated skillet. Pour leftover egg mixture on top of nuggets.
Brown nuggets on all sides, about 4 minutes total.
Serving Size: Recipe makes 1 serving
