3 small sweet potatoes - baked and peeled and mashed3 scoops of Vanilla Protein powder ( I used EAS Brand)1 teaspoon Vanilla extract2 teaspoons cinnamon1/8 teaspoon of nutmeg1/8 teaspoon allspice3/4 cup of water1 cup of egg whites (or 5 if you separate the eggs yourself)1 1/2 cups - Red Mill Whole Grain Low Carb Baking Mix1 cup Stevia1 teaspoon baking soda1/2 teaspoon salt
Bake sweet potatoes, peel mash and let cool. After cooling, add stevia, water, egg whites and vanilla. mix well. In a separate bowl combine the oatmeal flour, protein powder, cinnamon, nutmeg, allspice, baking powder and salt. pour potato mixture into flour mixture, mix well. This will be a stiff batter, so I used a baking pan that has 12 2 x 2 individual cakes. Spray pan with pam, bake at 350 for 30 minutes. If you prefer you can a wee bit more water for a thinner batter and bake in a 9 x 9 baking pan.
