Directions
1. Rinse octopus well and cut into large cubes. Place in pan over a low heat. Cook gently, octopus will produce some liquied and the color of the flesh will change. Keep turning the pieces until the liquied has almost evaporated.
2. Add garlic (and onion) and stirr until they turn golden.
3. Stir in chilli, bay leaf, oregano, cinnamon and allspice (optional). Add mushrooms. Pour in the wine and let it bubble and evaporate.
4. Dilute tomato puree in 1.25 cup of warm water. Pour into the pan, add black pepper and cover and cook for 1 hour. Add spinach, shrimp and fish balls and cook for another 20 min (or until the octopus is perfectly soft)
5.Preheat the oven to 325. Bring the octopus mixture to the boil and then add 1.25 cups of boiling water. Stirr in the dried pasta, coating it in the mixture. Transfer to the oven and bake for 30-35 min, stirring occasionally and adding a little hot water in the mixture starts to look dry. Add feta cheese. Garnish with parsley
