2 Tbsp Olive Oil1 Onion, chopped2 cups Potatoes, diced into 1 inch pieces1 Cauliflower, cut into flowerets1/2 tsp Ground Turmeric1/3 tsp Chili Powder1 tsp Ground Cumin2 Tomatoes, chopped1/4 tsp Agave Nectar (or Sugar)1 cup Peas1/2 tsp Garam Masala (OPTIONAL)
Heat oil in a large pot over medium-high heat. Add The onions and fry for 3-4 minutes, until light brown. Add the potatoes and cauliflower and stir. Add the turmeric, chili, cumin, tomatoes, salt, and sugar. Stir and fry for 2-3 minutes. Add the peas, cover and lower heat the medium low and cook for about 25 minutes until the potatoes and cauliflower are tender. During the cooking period, stir vegetables a few times to keep them from sticking.
If you want a little more "sauce" instead of just vegetables, then blend about a quarter of the veggies with an immersion blender.
Serve sprinkled with Garam Masala and eat with Basmati Rice or Naan.
