One pot Chicken, Pasta and Vegetables

Ingredients
6 oz uncooked pasta12 oz chicken breast, raw, chopped into 1/2" pieces1 cup chopped carrots1 small onion chopped1 cup chopped celery1 tbsp mixed fresh herbs to taste (rosemary, thyme, sage, basil)1 tsp salt2 tsp Caribbean spice (or other spice mix)1 tbsp olive oil or coconut oil3-4 garlic cloves, minced2 cups chicken stock
Directions
- Saute the onions, garlic and celery until the onions are soft.
- Add in chopped chicken, and cook until chicken is mostly cooked through. (if you like well done carrots, add them in now too)
- add all other ingredients
- add water if needed to cover the pasta
- bring to a boil
- simmer the pasta uncovered for 6-9 minutes, until pasta is cooked to your taste. Add more water if needed - pasta should remain barely covered.
