Spinach Dal

Ingredients
1 cup fresh spinach; 1 cup red lentils; 1 cup chopped onions; 0.5 cup chopped tomatoes; 1 tsp ginger paste; 1 tsp garlic paste; 1 tsp olive oil, 1 tsp chilli powder, 1 tsp turmeric powder; 1 tsp garam masala; salt to taste
Directions
Wash and chop fresh spinach and keep aside. Wash the lentils also and keep aside. In a dutch oven, heat 1 tsp of olive oil and saute the cumin seeds in it. Once they stop sputtering, add the onions and saute till golden brown. Add ginger and garlic paste and contine to saute till the raw smell leaves the pan. Next add the chopped tomatoes and saute for a minute. Add the spinach and the lentils and saute for a minute. Now add enough water to cover the spinach-lentil mixture and cover and cook till the lentils are soft and mushy. This should take around 30 minutes. Now add salt, garam masala and take off the fire. You can add a tsp of lemon juice just before serving if you choose.

This dal can be eaten as a soup and also as an accompaniment with rice.
