Crustless asparagus-mushroom quiche

1 1/2 cup egg beaters1 cup chopped asparagus1 cup chopped mushrooms1/2 cup 3-cheese italian cheese blend1/2 medium onionsalt and pepper to taste
Spray saute pan with cooking spray and saute onions and asparagus. After they begin to soften, add mushrooms. Cook until mushrooms begin to soften.
Spray pie pan with cooking spray. Spread sauted asparagus mixture in bottom of pan. Spread cheese over asparagus mixture. Beat eggs with water (salt and pepper to taste) and pour on top of cheese.
Bake in 350 degree oven until set (20-25 minutes).
Serving Size: Serving = 1/4 pie
