Jo's Fried Chicken

Ingredients
Shortening for fryingCast iron Skillet Large2 lbs. Chicken breast2 cups flour2 TBLS of each seasoningsalt, pepper, rubbed sage, chili powder, onion powder, and garlic powder4 large eggs2 teaspoons milk
Directions
Heat shortening to 350 degrees F.

Beat eggs and milk in small bowl
In different bowl mix flour and seasonings together.
Dip chicken pieces in egg mixture and coat well in flour mixture.
Carefully add to hot shortening, in batches if necessary, place lid on top of skillet
Fry until brown and crisp.
Remember that dark meat requires a longer cooking time (13-14 minutes)
White meat should take about 8-10 minutes to fry.
This is great cold the next day or for a mid nite snack. also its great with cicken shack bbq sauce.
