Sweet Potato Cakes

Ingredients
Sweet potato, 2 cup, cubes Butter, unsalted, .125 cup Milk, nonfat (skim milk), .125 cup Egg, fresh, whole, raw, 1 large Bread crumbs, dry, grated, plain, .5 cup Canola Oil, 1 tbsp
Directions
Cook sweet potatoes and mash with butter and milk. Add egg, form patties, dredge in bread crumbs, and pan fry.
