Zesty Lime Shrimp and Avocado Salad

Ingredients
1 lb cooked shrimp chopped1 medium tomato diced1 hass avocado diced1 jalapeno, seeds removed, diced fine1/4 cup red onion choppedjuice of 2 limes1 tsp olive oil1tbsp chopped cilantrosalt and pepper to taste
Directions
in a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. let them marinate at least 5 minutes to mellow the flavor of the onion.
in a large bowl combine shrimp, avocado, tomato, jalapeno. combine all the ingredients together, add cilantro and gently toss. add salt and pepper to taste.

Serving Size: makes 3 1/2 cups (4 servings=.875 cup/serving)
