Eggless Black Bean Brownie

Ingredients
3/4 c whole wheat pastry flour (or flour of choice)10 tbsp Penzey's Dutch Process High Fat Cocoa1 c organic cane sugar1/2 tsp baking powder1/2 tsp salt2 tsp instant coffee1/2 15 oz can black beans (rinsed)1 c water2 tsp vanilla extract
Directions
Mix dry ingredients

Make one cup strong black coffee.

Rinse black beans repeatedly until water runs clear. Fill can half full with black beans and coffee. Blend until smooth.

Add bean mixture, remaining coffee, and vanilla flavoring to dry ingredients.

Bake at 350 F for approximately 24 minutes or until edges pull away from pan and middle is just firming up. Do not overbake.
