2 cups Namaste Gluten Free Perfect Flour Blend1/2 cup sugar part brown2 t. baking powder1 t. baking soda1 T. cinnamon1 cup shredded zucchini1 cup sour cream or yogurt2 egg yolks
Preheat oven to 350 degrees. Grease muffin pan with coconut oil (1 teaspoon is all I use). Combine wet and dry ingredients in separate bowls. Add dry ingredients to wet. Mix until moist. Divide into 12 muffin tins. Bake for 12 to 15 minute or until toothpick comes out clean.
