1 1/4 c almond meal1/4 c coconut flour1/4 c wide shred coconut (unswtnd)1 T flax meal3 pkts of Stevia2 large eggspinch of salt 1/4 t baking soda1/2 c almond milk2 T butter1/2 t coconut extract1/2 t almond extract
Mix dry ingredients
Melt butter in frypan
mix eggs and almond milk in to dry
Add melted butter and heat pan to medium.
Add batter in cake size blobs. Give it a shake to smooth it out. Flip when golden on bottom. You can add a few blueberries just before flipping if you like. Serve with maple syrup or Mrs. Butterworth's no sugar added syrup
