1 3/4 cup AP unbleached flour3/4 teaspoon baking soda1 1/4 teaspoon cream of tarter1/2 teaspoon salt2 1/4 tbsp shortening2.4 tbsp (.15 cup) Applesauce, unsweetened 10 tbsp + 2 tsp (32tsp) Splenda 1/2 cup Egg beaters 2 med overripe Bananas
Heat oven to 350 F degrees. Grease mini cupcake pans and set aside. Cream banana's, splenda, applesauce, and shortening until creamy. Add eggs, cream of tarter, baking soda. Add flour slowly until completely incorporated. Pour into mini pans, leaving room at top for expansion. Bake for 20-30 minutes, or until golden brown. Makes approximately 36 mini muffins or 2 loaves.
