Skillet Mushroom Alfredo Pasta

Ingredients
1/2 (12-oz) box gluten-free fettuccine, brokeninto thirds1 tsp olive oil1 (8-oz) pkg sliced fresh mushrooms1 clove garlic, minced1/8 tsp salt1/8 tsp pepper1/2 cup gluten-free Alfredo sauce, heated1 Tbsp freshly grated Parmesan cheese
Directions
Cook pasta according to package directions;
drain, reserving ¼ cup pasta water. Heat oil in a
nonstick skillet over medium-high heat. Sauté
mushrooms 4 minutes or until mushrooms
begin to brown. Stir in fettuccine, reserved
pasta water, garlic, salt and pepper. Cook 2
minutes or until thoroughly heated. Divide into
two servings; top evenly with sauce, and
sprinkle with Parmesan cheese.
