spinach salad

Ingredients
bacon, hormel black label bacon lower sodium 2 pcs, 2.5 serving (remove)Shallots, 1.5 tbsp chopped (remove)(C) Vinegar, Red Wine (Gr Value), 8 tbsp (remove)*French's Sweet & Tangy Honey Mustard, 6 tsp (remove)Bacon grease, 6 tsp (remove)Baby Spinach (raw), 10 cup (remove)Mushrooms, fresh, 2 cup, pieces or slices (remove)Red Onion Raw (1/4 cup, 40g or 1.4oz), 0.25 cup (remove)
Directions
cook bacon, drain on paper towels
saute shallots in 2 T. of bacon grease for 2 min.
whisk in vinegar and honey mustard and salt and pepper to taste
scrape up brown bits from bottom of skillet and bring to a simmer, then remove from heat
toss together spinach, mushrooms, onion and crumbled bacon
toss with warm dressing, serve immediately
