Egg White Omelette with Veggies and Feta

Ingredients
1/3 cup egg whites (roughly 3)2 tbsp low-fat feta cheese2 tbsp shredded spinach1/4 cup carrot slaw (carrots, broccoli, and red cabbage cut into thin, small pieces)
Directions
Pour egg whites into a nonstick pan (in a good pan, no cooking spray is required) over medium heat. Add cheese, spinach, and carrot slaw.

Cook until the underside is firm and slightly brown, then flip and cook the other side. Serve and eat immediately.

Serving Size: Makes one generously-sized omelette.
