Peanut Butter Chocolate Chip Muffins

Ingredients
2 c. all purpose flour1/2 c. peanut flour (or substitute with Peanut butter and reduce milk by 1/4 c.1 Tbsp. baking powder1/2 tsp. sea salt1/3 c. white sugar1/3 c. brown sugar1 tsp. vanilla1 Tbsp. ground flax seeds + 3 Tbsp. water1 1/2 c. almond milk1/4 c. olive oil or canola oil1/3 c. semi-sweet chocolate chips
Directions
Preheat oven to 400 degrees. Mix flax seeds and water in a small bowl to let sit for about 10 minutes to make "flax egg." Set aside. Combine dry ingredients in a large bowl. In a separate bowl, whisk to combine wet ingredients, then add flax egg. Pour wet ingredients into dry ingredients & mix just until combined. Add chocolate chips. Spoon into greased muffin tins & bake for 20 minutes.
