Gluten Free Butter Cookies

Ingredients
(conversions)13.5tsp (3/8c or 54g) coconut sugar3/8c Granulated SugarOR3/4c sugar1/2c (1stick or 112 grams)Unsalted Butter1 large egg1/2tsp Vanilla extract1.5c Gluten Free Flour Blend **(I used Pillsbury Best Multi Purpose Gluten Free Flour Blend which has xanthan gum included)1/2tsp Baking SodaChocolate Chips or dark chocolate pieces optional
Directions
Heat oven to 400ºF.

-Combine sugar, butter, egg and vanilla in medium to large size bowl.
-Beat at medium speed, scraping bowl often, until well mixed.
-Add gluten-free flour blend and baking soda; beat at low speed, scraping bowl often, until well mixed.
-For more rise let sit for 10m
-Shape dough into 1-inch balls
-Roll in gluten-free decorator sprinkles or sugars as desired.
-Place 2 inches apart onto ungreased cookie sheet(s) or parchment paper on cookie sheet(s).
-Flatten slightly with bottom of glass dipped in sugar or a spoon.
-Add chocolate chips/pieces on top or any other like sprinkle brown sugar
Flatten a larger piece and cut with cookie cutter is desired (make sure to press all the way through, batter sticks a little to outside edges)
-Bake 5-8 minutes or until edges are lightly browned.
