Gorgonzola Sauce

Ingredients
1 Pint Heavy whipping cream2 oz. Gorgonzola cheese crumbles1.5 Tbsp grated parmesan cheese1.5 Tsp Kosher Salt1 Tsp pepper.5 Cups finely chopped Parsley
Directions
Cook Cream over medium high heat until reduced, about 45-50 min. stirring occasionally.
remove from heat, stir in cheeses, salt & pepper. Drissle parsley ontop and swirl in. Serve immediately over top quality beef.
