Pear Honey

Ingredients
10 Med pears4 cups sugar18 maraschino cherries1 cup crushed canned pineapple
Directions
Cut pears (no need to peel if you have a food mill) into chunks and put into large dutch oven with a little water over med heat. Cook until the pears reduce down and are nice and soft. Add sugar while cooking once there is enough liquid released from the pears so the sugar won't burn.

Remove from heat and process in food mill.

Mix in pineapple.

Use boiling water to sanitize jars.

Pour hot into pint or half pint sized jars. Add one maraschino cherry for a nice "blush" to each jar.

Set a small pan of water on the stove to boil and add NEW canning lids. Remove from heat, but keep in water until you place them on the jars. Wipe each jar so there is no honey on rim, then drop the lid on using tongs. Secure canning ring around them.

Waterbath can for about 10 minutes in boiling water. Remove from water and place upside down for 10 min. Invert and let sit to cool. All lids should be sealed. Use any unsealed cans immediately.

Each jar should make about 6 servings for a total of 72-80 servings.

Most recipes call for double sugar, but the fresher the pears the less sugar you need. In fact, I bet you could do this with only 2 cups if the pears are good and fresh! I used 4 and it's very sweet. Awesome on toast or crumpets!
