Vegetarian Meatloaf

Ingredients

1/2 cup chopped onion1/2 cup chopped bell pepper1/2 cup chopped carrot1/2 cup chopped celery1 large can of cooked lentils2/3 cup tomato sauce3 tablespoons ground flax seed1 cup All Bran cereal, ground to make 1/2 cup crumbs1/2 cup cooked quinoa or brown rice1 egg1 tablespoon oregano1 tablespoon garlic powderSalt and pepper to taste2 tablespoons ketchup or barbeque sauce
Finely chop the vegetables or place larger chunks into a food processor.
Mash the cooked lentils to form a paste and set aside.
In a non-stick pan, cook vegetables until tender.
Add cooked vegetables, mashed lentils and the rest of the ingrediants, except ketchup, in a large bowl. Mix thuroughly.
Spoon into a small greased or non-stick loaf pan. Press to form a loaf. Spread ketchup of barbeque sauce on top. Bake uncovered for 35 minutes or until firm.
This will make approximately 8 slices that are 1/2 inch by 1 1/2 inch.
